CAJUN RED BEANS + RICE

CAJUN RED BEANS + RICE

(Serves 6)

Ingredients: Here’s What You Need

  • 1 lb. Smoked turkey kielbasa, sliced (omit for a vegetarian option)

  • 1 lb. Dry red kidney beans

  • 1 Medium white onion, diced

  • 2 Stalks of celery, diced

  • 2 Bell peppers, diced

  • 2 14 Ounce cans of fire roasted tomatoes

  • Enough water to cover beans in crock pot

  • Salt, pepper, homemade creole seasoning

  • Brown Rice

Homemade Creole Seasoning:

  • 2 T. Onion Powder

  • 2 T. Garlic Powder

  • 2 T. Oregano

  • 2 T. Basil

  • 1 T. Thyme

  • 1 T. Black Pepper

  • 1 T. Cayenne Pepper

  • 5 T. Paprika

  • 3 T. Salt

Recipe: Follow These Steps

In a large crockpot, add kielbasa (if using), dry red beans, diced tomatoes and enough water to just cover the beans. Add desired seasonings. Cook on low for 6-8 hours or, until beans are soft. Serve over brown rice.
