Cilantro Lime Grilled Chicken

(makes 4 servings) Meat
  • 1-pound boneless, skinless chicken breast
Marinade
  • 2-4 tablespoons olive oil
  • 1 tablespoon lime zest
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 teaspoon sea salt
  • ¼ teaspoon pepper
  1. Combine all marinade ingredients in a small mixing bowl and which to combine.
  2. Place chicken in a large Ziploc bag and pour marinade over top. Seal the bag and remove all air. Gently shake the bag to cover the chicken.
  3. Allow to marinade for a minimum of 30 minutes (overnight for best flavor!) in the refrigerator.
  4. When ready to grill, remove the chicken from the bag and place it on a heated grill. Cook chicken on each side for about 7-8 minutes until cooked through. Enjoy!
*This recipe can be doubled or tripled for batch cooking*
