Chocolate Oatmeal Christmas Cookies (no bake)

  • 1 cup old-fashioned rolled oats
  • 1/2 cup natural peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup dark chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Optional toppings: shredded coconut, chopped nuts, or festive sprinkles
  1. In a medium saucepan over low heat, combine the peanut butter (or almond butter), honey (or maple syrup), cocoa powder, vanilla extract, cinnamon, and salt. Stir until melted and smooth, about 2-3 minutes. Remove from heat.
  2. In a large mixing bowl, add the rolled oats. Pour the melted mixture over the oats and stir until well combined. If using dark chocolate chips, fold them in at this stage.
  3. Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the parchment paper, flattening them slightly to form cookie shapes.
  4. Place the baking sheet in the refrigerator for about 30 minutes to allow the cookies to firm up.
  5. If desired, sprinkle with shredded coconut, chopped nuts, or festive sprinkles before serving.
  6. Once set, enjoy your healthy no-bake Christmas cookies! Store leftovers in an airtight container in the refrigerator.
