Today’s menu: Chicken Fajita Foil Packs
As you head into the holiday weekend, these make for the perfect grill and chill evening with who knows – maybe a side of margaritas!?

CHICKEN FAJITA FOIL PACKS
(Serves 4)
Ingredients: Here’s What You Need

1 lb. Boneless, skinless chicken breast, cut into thin strips

3 Medium bell peppers, thinly sliced

1 Red onion, thinly sliced

Juice from 1 lime
-
2 T. Olive oil

Fajita seasoning

2 t. Chili powder

2 t. Cumin

1 t. Garlic powder
-
1 t. Smoked paprika
-
1 t. Sea salt
-
½ t. Black pepper, fresh ground

⅛ t. Cayenne pepper
Recipe: Follow These Steps

Preheat oven to 425 degrees.

Combine chicken, peppers, onion, lime juice and olive oil. Stir well and combine.

Add fajita seasoning to chicken mixture and stir until well coated.

Using 4 18×12 inch sheets of aluminum foil begin arranging chicken packs. Lightly spray each sheet to prevent sticking. Add ¼ of the chicken mixture to each foil sheet, fold foil over and pinch to seal. Place foil packs on a baking sheet. Bake at 425 for 25-30 minutes rotating once halfway through.
