Cheesy Broccoli Pasta
(makes 2 servings)

4 ounces chickpea pasta such as Banza brand

2 ounces flavored goat cheese

2 cups steamed broccoli florets

Cook pasta according to package directions. Drain and reserve 1/4-1/2 cup of the cooking water.

Return pasta to the pot and add the goat cheese. Stir until cheese melts and coats the pasta. Add a bit of reserved water to achieve a creamier consistency.

Top off with steamed broccoli and season with salt and pepper.
