Blueberry Lemon Protein Cookie

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features:

Blueberry Lemon Protein Cookie

(makes 18 cookies)

  • 1 cup oats

  • 1 cup almond flour

  • 2 scoops vanilla protein powder

  • 1 cup vanilla Greek yogurt

  • 1/2 cup honey

  • zest of 1 lemon

  • 1 teaspoon vanilla

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup fresh blueberries

  1. Preheat oven to 350 degrees. Coat a large cookie sheet with cooking spray.

  2. Place oats in a food processor and pulse until mostly ground.

  3.  Add almond flour, protein powder, honey, yogurt, lemon zest, vanilla, baking powder, baking soda, and salt to the oats. Pulse until ingredients resemble a batter consistency.

  4. Add blueberries and pulse for an additional 10 seconds.

  5. Spoon the batter onto the cookie sheet. Form 18 cookies that are evenly spaced apart.

  6. Bake for 10-12 minutes or until cookies are lightly browned.

  7. Allow cookies to cool before transferring them to a cooling rack using a spatula.

  8. Store in the refrigerator in a closed container.

  9. Enjoy!
