(makes 6-8 servings)
- 2 cups fresh berries of choice
- 2 tablespoons chia seeds
- 2 tablespoons honey or maple syrup
- Place berries in a medium-sized saucepan on medium heat. Allow the berries to cook down until they begin to release their juices.
- Once the berries have cooked down for several minutes, mash them using a potato masher until only small chunks remain.
- Add honey or maple syrup and chia seeds. Stir well to combine.
- Allow the jam to cook on medium heat for several more minutes and allow to thicken.
- Remove the saucepan from heat and allow to cool. Once the jam has cooled, place it in a sealed container and refrigerate for up to one week.
- This jam makes for a great topping on yogurt, cottage cheese, toast, and ice cream.
