BBQ Stuffed Sweet Potato
(makes 1 serving)

1/2 large steamed sweet potato, sliced lengthwise

3 ounces shredded rotisserie chicken

2 Tablespoons BBQ sauce (low-sugar brands such as Primal Kitchen)

In a small mixing bowl, combine chicken and 1 Tablespoon of BBQ sauce until mixed well.

Top sweet potato with the BBQ chicken and drizzle the remainder of the BBQ sauce on top.

Serve with a side of steamed or roasted veggies for a complete meal.
