It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features: Banana Bread Energy Bites. Full recipe is posted below.

Banana Bread Energy Bites

(makes 18-20 bites)

  • 2 medium ripe bananas

  • 1/3 cup creamy natural nut butter (peanut, cashew, almond)

  • 1/4 cup honey

  • 2 tablespoons chia seeds

  • 1 teaspoon ground cinnamon

  • 2 cups rolled oats

  1. In a large mixing bowl, combine all ingredients and mix well.

  2. If needed, add additional honey and nut butter if the mixture is too dry to form into balls.

  3. Refrigerate the mixture for 30-45 minutes.

  4. Once refrigerated, roll the mixture into 18-20 1-inch bites. Once formed, store bites in an air-tight container in the fridge or freezer.
