Banana Oat Breakfast Bars

(makes 8 servings)
  • 4 medium very ripe bananas
  • 2 cups liquid egg whites
  • 1/2 cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla
  • 3 cups old-fashioned or rolled oats
  • 1 cup vanilla whey protein powder
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 teaspoons cinnamon
  1. Preheat oven to 350 degrees and spray a 9×13 baking dish with non-stick cooking spray.
  2. In a large mixing bowl, mash bananas until they are no longer lumpy. Add egg whites, almond milk, and vanilla. Mix well to combine.
  3. In a separate large mixing bowl, combine oats, protein powder, baking powder, sea salt, and cinnamon. Mix well to combine.
  4. Add the dry ingredients to the wet ingredients and stir well to combine until a batter-like consistency.
  5. Pour the batter into the prepared baking dish and bake for 30-35 minutes or, until the top is a golden brown. Allow to cool and then cut into 8 bars.
  6. Enjoy!
