Banana Blender Muffins

It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features Banana Blender Muffins full recipe is posted below:

Banana Blender Muffins

(makes 12 servings)

  • 2 cups oats

  • 2 very ripe bananas

  • 2 eggs

  • 1 cup plain Greek yogurt

  • 2-3 Tablespoons honey

  • 1-1/2 teaspoons baking powder

  • 1- 1/2 teaspoons baking soda

  • 1/2 teaspoon vanilla

  • 1/8 teaspoon salt

  • 1/2 cup mini chocolate chips

1. Preheat the oven to 400 degrees.

2. Place all ingredients (except for chocolate chips) in a blender and blend until combined.

3. Add chocolate chips and mix well.

4. Place batter in a lightly greased muffin pan filling each cup about 2/3 full.

5. Bake for 15 minutes or until a toothpick inserted comes out clean.
