Balsamic Veggie Salad

(makes 4 servings)
1 large cucumber, halved and sliced
2 cups cherry tomatoes, halved
1 medium red onion, halved and thinly sliced
1/4 cup balsamic vinaigrette
1/4 cup crumbled feta
In a large bowl, combine cucumbers, tomatoes and onion. Add the balsamic vinaigrette and toss to coat.
Cover and refrigerate for 2-3 hours to allow the flavors to marinate.
When ready to serve, top with crumbled feta and enjoy!
