Baked Zucchini Sticks
(makes 2-4 servings)
- 2 large zucchini, sliced lengthwise into 8 wedges
- 1/4 cup liquid egg whites
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground rosemary
- salt and pepper, to taste
- In a small mixing bowl, add liquid egg whites. In a separate small mixing bowl, combine parmesan cheese, garlic powder, rosemary, salt, and pepper. Mix well to combine.
- Dip the zucchini wedges into the egg whites and then into the parmesan cheese mixture. Place dipped wedges into an air fryer basket and continue until all wedges have been covered.
- Air fry for 18-20 minutes at 425 degrees or, until zucchini is fork tender.
