7-Minute Protein Pancakes
*Bonus: you can choose from two kinds: Banana or Cottage Cheese. Pair with fresh fruit, almond butter, cinnamon … have ’em your way and get your kiddos involved!
COTTAGE CHEESE PANCAKES
(serves 1)

½. C. Rolled oats

½ C. Cottage cheese

2 Eggs

⅛ t. Sea salt

Add all ingredients to a blender and blend for 30 seconds.

Pour batter onto a heated skillet and cook for 2-3 minutes each side.
PEANUT BUTTER PANCAKES
(serves 1)

1 Medium ripe banana, mashed

2 Eggs
-
4 T. Powdered PB such as PB2

In a mixing bowl, mash banana and add remaining ingredients. Mix well.

Pour batter onto a heated skillet and cook for about 1 minute on each side.
