4-Ingredient Weeknight Tacos

It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features 4-Ingredient Weeknight Tacos- full recipe is posted below:


(makes 8 tacos)

  • 2 cups rotisserie chicken, shredded

  • 8 whole-grain, whole-wheat, or corn tortillas

  • 2 cups coleslaw mix

  • Salsa

  1. In the middle of each tortilla, place about 1/4 cup of coleslaw mix.

  2. Add 1/4 cup of shredded chicken to each taco and top with salsa.

  3. Add any additional toppings of your choice such as diced red onions, fresh avocado and cilantro.
