Cheeseburger Sloppy Joes

Cheeseburger Sloppy Joes

(makes 6 servings)

  • 1 pound lean ground turkey, chicken or beef

  • 1 small yellow onion, diced

  • 1 bell pepper, diced

  • 3 cloves garlic, minced

  • 1/4 cup tomato paste

  • 2 tablespoons mustard

  • 1 15-ounce can fire-roasted diced tomatoes

  • 1 tablespoon honey

  • fresh-grated parmesan

  1. In a large skillet, cook the ground meat until cooked through. Remove from pan and drain off excess fat. Set aside.

  2. To the skillet, add the onion, garlic, and bell pepper. Cook for 2-3 minutes until onion and pepper is slightly softened. Place the ground meat back in the skillet and combine with onion and peppers.

  3. Add the remaining ingredients to the skillet (minus parmesan) and stir well to combine. Allow to simmer for 15-20 minutes.

  4. When ready to serve, sprinkle fresh parmesan over the skillet.

  5. Serve on whole grain buns or in lettuce wraps.
