Lemon-Marinated Grilled Chicken
Note: This recipe is perfect for batch cooking and can be doubled or tripled to have extra on hand!*

1 1/2 pounds boneless skinless chicken thighs

1 cup plain Greek yogurt

juice and zest of 1 fresh lemon

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder

Place chicken thighs in a large Ziploc bag.

In a bowl, whisk together yogurt, lemon zest, lemon juice, olive oil, and seasonings. Pour mixture over the chicken, seal the Ziploc bag, and toss to coat.

Refrigerate for a minimum of 2 hours and up to overnight.

When ready to grill, preheat the grill for 10 minutes. Place chicken directly on the grill and cook for 4-5 minutes per side. Continue to cook until cooked through. Once cooked through, remove from grill and allow the chicken to rest for 10 minutes before serving.
