Meatball Parmesan
(Makes 8 servings)

2 pounds ground turkey, chicken, or beef

2/3 cup seasoned breadcrumbs

1/3 cup grated parmesan

2 eggs

2 cloves garlic, minced

1 tablespoon tomato paste

2 teaspoons Italian seasoning

1 teaspoon salt

1 jar marinara sauce

1/2 cup shredded mozzarella

Preheat the oven to 350 degrees.

In a large mixing bowl, combine ground meat, breadcrumbs, parmesan, eggs, garlic, tomato paste, Italian seasoning, and salt. Form into 8 baseball-sized meatballs.

Place meatballs onto a nonstick baking sheet and bake for 50-55 minutes or, until meatballs are cooked through.

Remove the meatballs from the oven when cooked through and place them into a 9×13 casserole dish. Top with a full jar of marinara sauce and cover with mozzarella cheese. Place back in the oven and cook until cheese has melted and sauce is warmed through.
