(makes one serving)
• 2 cups zucchini noodles (can buy pre-spiralized or, spiralize on your own using one medium-sized zucchini)
• 4 ounces cooked shrimp
• 1-2 tablespoons basil pest0
• 1 tablespoon olive oil
1. In a skillet, heat olive oil over medium heat. Add zucchini and saute’ for 2-3 minutes.
2. Add shrimp to the skillet and cook until warmed through.
3. Toss zucchini and shrimp with pesto and serve.
4. Enjoy!
