Sticky Chicken

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy quick, easy and taste good. This week’s menu features Sticky Chicken. Full recipe is posted below.

Sticky Chicken

(makes 2-4 servings)

  • 4 boneless skinless chicken thighs, diced

  • 1/4 cup low-sodium soy sauce or coconut aminos

  • 1/4 cup sweet chili sauce

  • 1/4 cup crunchy natural peanut butter

  1. Preheat oven to 350 degrees.

  2. Place soy sauce, sweet chili sauce, and peanut butter in a small saucepan and mix over low heat until simmering.

  3. Pour sauce over diced chicken and mix to combine.

  4. Place chicken on a lined baking sheet and bake for 25-30 minutes or until chicken is cooked through.
