Edamame & Cucumber Spring Salad

(makes 4 servings)

Salad

1 1/2  cups shelled edamame
1 large English cucumber, diced
1/4 cup thinly sliced red onion
2 tablespoons fresh parsley, chopped
1 tablespoon sesame seeds (optional crunch)

Dressing

  • 1 tablespoon olive sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon low-sodium tamari or soy sauce
  • pinch of salt
  1. Whisk together all dressing ingredients in a small bowl.
  2. Add edamame, cucumber, onion, and parsley to a large bowl.
  3. Pour dressing over top and toss well.
  4. Chill 15–30 minutes if you have time (flavor gets better).
  5. Sprinkle with sesame seeds before serving. Enjoy!
