Thai Turkey Meatballs

(makes 4 servings)

  • 1 pound lean ground turkey
  • 2 large egg whites
  • 4 tablespoons Thai peanut sauce (reserve 2 tablespoons)
  • 1/4 cup oat flour
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 1 tablespoon coconut aminos
  1. Preheat air fryer to 380 degrees.
  2. In a large mixing bowl, combine ground turkey, egg whites, 2 tablespoons of Thai peanut sauce, oat flour, garlic, ginger, and coconut aminos. Mix well to combine.
  3. Pinch off a tablespoon-sized portion from the meatball mixture and roll into individual meatballs.
  4. Place meatballs in the air fryer basket and cook until an internal temperature of 165 degrees (about 15-20 minutes, depending on the air fryer).
  5. Once cooked through, toss in remainder of the Thai peanut sauce and serve.
  6. Enjoy!
