Spicy Lime Shrimp Skewers

(makes 4 servings)

  • 1 pound peeled and deveined shrimp
  • 2-3 tablespoons Cajun seasoning
  • Juice of one lime
  • 1 tablespoon olive oil
  1. In a medium mixing bowl, combine seasoning, lime juice, and olive oil. Whisk well to combine. 
  2. To the bowl, add the shrimp and toss well to coat. Refrigerate the shrimp for 1-2 hours to marinate.
  3. When ready to grill, place the shrimp on grilling skewers evenly spacing them apart. Repeat until all shrimp has been used.
  4. Place shrimp skewers on a prepared grill and cook for approximately 2-3 minutes on each side or, until cooked through.
