Skillet Lasagna

Ingredients: Here’s What You Need

(Makes 4 servings)

  • 1 pound ground beef, turkey, or chicken

  • 1 white onion, diced

  • 3 cloves garlic, minced

  • 1 cup mushrooms, chopped

  • 1 zucchini, diced

  • 1 cup spinach, chopped

  • 1 jar of marinara sauce

  • 1 1/2 cups of water

  • salt and pepper, to taste

  • 1 tablespoon basil

  • 2 teaspoons oregano

  • 2 teaspoons garlic powder

  • 8 oven-ready whole-wheat lasagna noodles, broken into small pieces

  • 1/2 cup shredded mozzarella (optional)

Recipe: Follow these steps

  1. In a large skillet, brown the ground meat and drain. Return the ground meat to the skillet and season with salt and pepper.

  2. Next, add onions, garlic, mushrooms and zucchini to the skillet. Add remaining seasonings.

  3. Add marinara sauce and water to the skillet and stir well. Once combined, add lasagna noodles and stir again.

  4. Bring to a simmer. Cover and cook for an additional 15 minutes or until the noodles are soft.

  5. Once noodles are soft, remove from heat and sprinkle spinach and mozzarella over the entire skillet (if using).

  6. Cover with a lid for 1-2 minutes to melt the cheese.
