Rosemary Pork Loin

(makes 4 servings)
1 pork tenderloin, approximately one pound
2 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons fresh rosemary, minced
salt and pepper, to taste
Preheat oven to 425 degrees.
In a small bowl, combine garlic, olive oil, rosemary, salt and pepper. Whisk well to combine.
Place the pork in a shallow baking dish and brush the above mixture over the top of the tenderloin.
Place the baking dish in the oven and bake for 30-35 minutes or until the tenderloin has reached an internal temperature of 145 degrees.
Allow tenderloin to sit for 5-10 minutes before slicing.
