Rosemary Pork Loin

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Rosemary Pork Loin. Full recipe is posted below: (makes 4 servings)
Ingredients:
  • 1 pork tenderloin, approximately one pound
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons fresh rosemary, minced
  • salt and pepper, to taste

Instructions:

  1. Preheat oven to 425 degrees.
  2. In a small bowl, combine garlic, olive oil, rosemary, salt and pepper. Whisk well to combine.
  3. Place the pork in a shallow baking dish and brush the above mixture over the top of the tenderloin.
  4. Place the baking dish in the oven and bake for 30-35 minutes or until the tenderloin has reached an internal temperature of 145 degrees.
  5. Allow tenderloin to sit for 5-10 minutes before slicing.
  6. Serve and enjoy!
