Quinoa + Black Bean Power Bowl
(makes 2 servings)
- 1 cup cooked quinoa
- 1/2 cup black beans
- 2 hard-boiled eggs, halved
- 1/2 avocado, sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1 tablespoon olive oil
- 1 tablespoon lemon or lime juice
- 1 tablespoon chopped fresh cilantro or parsley
- Salt and pepper to taste
- In a large mixing bowl, combine the cooked quinoa, black beans, cherry tomatoes, cucumber, and avocado.
- Drizzle with olive oil and lemon or lime juice, and sprinkle with fresh cilantro or parsley.
- Season with salt and pepper to taste.
- Divide amongst 2 bowls and place the hard-boiled eggs on top.
