Quinoa + Black Bean Power Bowl

Quinoa + Black Bean Power Bowl  (makes 2 servings)
  1. 1 cup cooked quinoa 
  2. 1/2 cup black beans 
  3. 2 hard-boiled eggs, halved
  4. 1/2 avocado, sliced
  5. 1/4 cup cherry tomatoes, halved
  6. 1/4 cup cucumber, diced
  7. 1 tablespoon olive oil
  8. 1 tablespoon lemon or lime juice
  9. 1 tablespoon chopped fresh cilantro or parsley
  10. Salt and pepper to taste
  • In a large mixing bowl, combine the cooked quinoa, black beans, cherry tomatoes, cucumber, and avocado.
  • Drizzle with olive oil and lemon or lime juice, and sprinkle with fresh cilantro or parsley.
  • Season with salt and pepper to taste.
  • Divide amongst 2 bowls and place the hard-boiled eggs on top.
  • Enjoy!
