Pumpkin Protein Pancakes

Pumpkin Protein Pancakes (makes 4 servings)
  • 8 egg whites
  • 1 cup pumpkin puree
  • 2 cups whey protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice or, cinnamon
  1. In a large mixing bowl, add all ingredients and mix until combined.
  2. Spray a large skillet with non-stick cooking spray and heat over medium heat.
  3. To the skillet, add pancake batter in 8 equal-sized scoops. Depending on the skillet size, you may need to cook in batches.
  4. Flip the pancakes once the bottom begins to form (about 4-5 minutes). Continue to cook until both sides are cooked through and lightly browned.
  5. Serve topped with items such as coconut, pumpkin seeds, nut butter, or maple syrup.
  6. Enjoy!
