MEXICAN QUINOA SALAD
(makes 4 servings)
Ingredients: Here’s What You Need

1 cup prepared quinoa (refrigerate overnight for best texture)

1 can black beans, drained and rinsed

1 cup salsa

1 cup corn kernels

1 teaspoon chili powder

1 avocado, diced
