Guacamole Deviled Eggs

(makes 6 servings)

  • 6 hard boiled eggs, cooled

  • 1 medium avocado, mashed

  • 1-2 tablespoons red onion, finely chopped

  • 1 tablespoon jalapeno, finely chopped

  • 2 tablespoons salsa

  • 1/2 tablespoon lime juice

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon chili powder

  1. Slice hard-boiled eggs length-wise, remove yolks, and add them to a medium mixing bowl. Place halved eggs on a plate and set aside.

  2. In a medium mixing bowl, combine egg yolks, avocado, onion, jalapeno, salsa, lime juice, and seasonings. Mix well to combine.

  3. Place a spoonful of egg mixture into each egg white. Allow to chill in the refrigerator for 3-60 minutes before serving. Enjoy!
