Chickpea Salad w/ Lemony Greek Dressing
(makes 4 servings)
Salad

1-15 ounce can of chickpeas, rinsed and drained

1 red bell pepper, diced

1 yellow pepper, diced

1/4 cup red onion, diced

1 cup grape tomatoes, halved

1/3 cup olives, sliced (optional)

1 medium cucumber, diced
Place all ingredients into a large bowl and toss to combine. Add the desired amount of dressing and toss again to coat all ingredients. Place in refrigerator for 1-2 hours to marinate. Add salt, pepper, or, any additional seasonings to taste. Enjoy!
Lemony Greek Dressing

1/2 cup feta crumbles

1/2 cup plain Greek yogurt

2 cloves garlic, minced

2 tablespoons fresh lemon juice

Add all ingredients to a blender or food processor. Blend until combined.
