Sheet Pan Lemon Herb Chicken & Veggies

(makes 4 servings)

  • 1 pound chicken breast or thighs, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 bell pepper, chopped
  • 1 tablespoon olive oil
  • Juice + zest of 1 lemon
  • 1 teaspoon Italian seasoning, salt, pepper
  • Fresh parsley, chopped
  • Feta cheese, crumbled (optional)
  1. Toss all ingredients on a sheet pan and mix well to combine.
  2. Bake at 425°F for 22–25 min.
  3. Garnish with fresh parsley and a sprinkle of feta (optional) before serving.
