Butter Chicken

Butter Chicken

(makes 4 servings)

Ingredients for chicken:

  • 1 pound boneless, skinless chicken breast, diced

  • 1/2 cup plain Greek yogurt

  • 3 cloves garlic, minced

  • 1 Tablespoon ginger, freshly grated

  • 1 teaspoon smoked paprika

  • 1 teaspoon garam masala

  • 1 teaspoon turmeric

  • salt and pepper, to taste

Ingredients for sauce:

  • 1 Tablespoon grass-fed butter

  • 1/2 white onion, sliced

  • 1 Tablespoon cashew butter

  • 1-14.5 ounce can diced tomatoes

  • 2 Tablespoons plain Greek yogurt

  • 1 teaspoon smoked paprika

  • 1 teaspoon garam masala

  • 1 teaspoon turmeric

  • salt and pepper, to taste

  1. In a large bowl, combine chicken, Greek yogurt, garlic, ginger, smoked paprika, garam masala, turmeric, salt, and pepper. Mix well to coat the chicken.

  2. Cook chicken in a large well-oiled skillet until cooked through. Remove from skillet and set aside.

  3. To prepare the sauce, melt butter in the skillet and add the onion. Saute’ for 3-5 minutes.

  4. To the skillet, add cashew butter, tomatoes, Greek yogurt, paprika, garam masala, turmeric, salt, and pepper.

  5. Cook for several minutes until all ingredients are heated through.

  6. Pour sauce ingredients into a blender and pulse until smooth.

  7. Return the chicken to the skillet and pour the prepared sauce over top. Mix well to combine.

  8. Serve over brown rice.
