(makes 6 patties)
- 1.5 pounds ground chicken
- 1/4 cup egg whites
- 1/2 cup crumbled blue cheese
- 1/2 cup scallions, diced fine
- 1/2 cup Buffalo sauce (primal Kitchen is my personal fav!)
- Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
- In a large bowl, combine chicken, egg whites, blue cheese, scallions, and 3/4 of the Buffalo sauce. Form the mixture into 6 patties and place them on the lined baking sheet. Bake for 15-20 minutes (flipping halfway through) or, until cooked through.
- Remove patties from the baking sheet and drizzle with the remaining Buffalo sauce. Serve in a bun, lettuce wrap or, on it’s own.
