Nothing says hello, dinner than bruschetta chicken! You can serve it solo or over an arugula salad, bed of sautéed spinach, your favorite pasta or zucchini noodles. Endless options and makes the average chicken dinner feel way less boring!
Bruschetta Chicken

1 pound boneless, skinless chicken breast cut into thin cutlets

½ tablespoon Italian seasoning

4 ounces fresh mozzarella, sliced

salt and pepper, to taste
Bruschetta Topping

2 cups cherry tomatoes, halved

2 tablespoons olive oil
-
1 tablespoon balsamic vinegar
-
2 cloves garlic, minced

¼ cup fresh basil, chopped

salt and pepper, to taste
In a medium bowl, combine all ingredients for the bruschetta topping and refrigerate.
Season chicken cutlets with salt, pepper, and Italian seasoning. In a large skillet, cook chicken on both sides for about 2-3 or until cooked through. Top with mozzarella slices and cover to allow the cheese to melt
Serve topped with the bruschetta topping.
