(makes 4 servings)
Salad
- 2 cups cooked farro
- 1 cup apple, diced
- 1 oz. crumbled feta or goat cheese
- 1/4 cup celery, chopped
- 1/4 cup dried cranberries
- 2 cups of salad greens such as arugula
Vinaigrette
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons honey or maple syrup
- 1/8 teaspoon salt
- 1/8 teaspoon garlic powder
- In a large mixing bowl, combine all salad ingredients (minus the greens) and mix well to combine
- In a small mixing bowl, whisk all vinaigrette ingredients together.
- When ready to serve, add vinaigrette to the salad mixing bowl and toss to combine. Serve on top of desired greens
