Skillet Taco Turkey and Rice
(makes 4-6 servings)

1 pound lean ground turkey

1 can black beans, drained and rinsed

2 cups salsa

1-2 teaspoons chili powder

1-2 teaspoons cumin

salt and pepper, to taste

2 cups cooked brown rice

Your favorite taco toppings!

In a large skillet, brown ground turkey until cooked through. Drain off any excess fat and return to the skillet.

Add beans, salsa, spices , and cooked rice. Mix well to combine and simmer for several minutes until the mixture thickens.

Divide the taco turkey into bowls and top with your favorite taco toppings.
