Salad

1 pound Brussels sprouts, shredded

2 cups fresh peaches, sliced

1/4 cup crumbled feta, goat cheese, or bleu cheese

1/4 cup almonds, sliced

1/4 cup raw pumpkin seeds
Tahini Dressing

1/4 cup tahini
-
2-3 tablespoons lemon juice, fresh-squeezed

1-2 tablespoons maple syrup, adjust based on desired sweetness

1 teaspoon Dijon mustard

1/4 teaspoon garlic powder

1/4-1/2 teaspoon salt

2-3 tablespoons water to thin dressing to desired consistency

In a small mixing bowl, combine all ingredients for the dressing by whisking briskly until all ingredients are incorporated. Add additional maple syrup if you prefer your dressing a little sweeter.

In a large mixing bowl, add the shredded Brussels sprouts. You can find pre-shredded sprouts in many grocery stores or, you can shred them on your own by pulsing them in a food processor or, slicing them with a knife.

Pour the dressing over the Brussels sprouts and toss to coat. Allow this mixture to marinate in the refrigerator for at least minutes.

When ready to eat, top with sliced peaches, cheese, almonds, and pumpkin seeds. Lightly toss again to incorporate all ingredients. Enjoy!
