TRAIL MIX BAKED OATMEAL

Ingredients: Here’s What You Need

  • ½ cup natural nut butter

  • 1 tablespoon maple syrup

  • 1 large egg, beaten

  • 1 teaspoon vanilla

  • 1 ⅓ cup unsweetened almond milk

  • 1 ½ cup rolled oats

  • 1 scoop vanilla protein powder

  • ½ teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 1 cup shredded zucchini, squeezed of excess moisture

  • ¼ cup pumpkin seeds

  • ¼ cup dried cranberries

  • ¼ cup mini chocolate chips

Recipe: Follow These Steps:

  • Preheat oven to 350 degrees and lightly spray a 9×13 baking pan with cooking spray

  • In a large bowl, combine the nut butter, maple syrup, egg, vanilla, and almond milk. Whisk together until combined and nut butter is smooth

  • Fold in oats, baking powder, protein powder, cinnamon and, salt

  • Fold in shredded zucchini. Add pumpkin seeds, dried cranberries, and mini chocolate chips.

  • Pour into the prepared pan and spread evenly. Bake for 30-35 minutes until the oatmeal is set.

  • Allow to cool for several minutes and cut into 8 squares.
