MEXICAN QUINOA SALAD

(makes 4 servings)

Ingredients: Here’s What You Need

  • 1 cup prepared quinoa (refrigerate overnight for best texture)

  • 1 can black beans, drained and rinsed

  • 1 cup salsa

  • 1 cup corn kernels

  • 1 teaspoon chili powder

  • 1 avocado, diced

Recipe: Follow These Steps:

In a large mixing bowl, gently combine all ingredients and refrigerate 1-2 hours before serving.
