Slow Cooker Peanut Chicken Bowls

(makes 8 servings)

  • 2 pounds boneless, skinless chicken breast
  • 1/3 cup peanut butter
  • 1/4 cup soy sauce or coconut aminos
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger
  • juice of 1 lime
  1. Add all ingredients to the slow cooker and mix well to combine.
  2. Cook on low for 6–7 hours.
  3. Using two forks, shred chicken and stir sauce together.
  4. Serve over rice or riced cauliflower and top with items such as sliced cucumbers, edamame, and carrots.
