YOUR NEW YEAR’S EVE MENU

It’s Coach Amie back with Forking Made Easy – this week’s new recipes. Today’s menu is all about New Year’s Eve as we anxiously await the highly anticipated arrival of 2021.

To start 2021 off right, we are talking appetizers, finger foods and bubbly! Simple, effective and FUN! Join me in the kitchen now and stay fueled! The full recipes are shared below.

STUFFED DATES

Ingredients: Here’s What You Need

  • 12-16 Medjool dates

  • 4 ounces creamy goat cheese

  • ¼ cup crushed pistachios

  • 1 tablespoon regular honey or, hot honey

Recipe: Follow These Steps

Remove pits from dates. Fill each date with about ½ tablespoon of goat cheese. Sprinkle with crushed pistachios and drizzle with honey.

BLACK BEAN DIP

Ingredients: Here’s What You Need

  • 2 cans black beans, drained and rinsed

  • ¾ cup – 1 cup salsa

  • 4 cloves garlic

  • 2 teaspoons lime juice

  • 1 teaspoon cumin

  • 1 tablespoon water

  • ⅛ teaspoon salt

  • ¼ cup cilantro, chopped

Recipe: Follow These Steps

Blend all ingredients except for cilantro in a high speed blender until smooth, If needed, add additional water. Add cilantro and pulse until incorporated.

Serve with fresh cut veggies or whole-grain tortilla chips.

PROSECCO FLOAT

Ingredients: Here’s What You Need

  • 1 scoop of sorbet of your choice

  • ½- 1 cup of ice cold Prosecco

  • Place sorbet in a martini or champagne glass and pour Prosecco over.
