- 1 pound lean ground turkey
- 2 large egg whites
- 4 tablespoons Thai peanut sauce (reserve 2 tablespoons)
- 1/4 cup oat flour
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, finely grated
- 1 tablespoon coconut aminos
- Preheat air fryer to 380 degrees.
- In a large mixing bowl, combine ground turkey, egg whites, 2 tablespoons of Thai peanut sauce, oat flour, garlic, ginger, and coconut aminos. Mix well to combine.
- Pinch off a tablespoon-sized portion from the meatball mixture and roll into individual meatballs.
- Place meatballs in the air fryer basket and cook until an internal temperature of 165 degrees (about 15-20 minutes, depending on the air fryer).
- Once cooked through, toss in remainder of the Thai peanut sauce and serve.
