- 2 cups rolled oats
- 1 cup pumpkin purée (unsweetened)
- 2 scoops vanilla protein powder
- 2 large eggs
- 1 ½ cups unsweetened almond milk (or milk of choice)
- 1–2 tablespoons maple syrup (or sweetener of choice, optional for taste
- Preheat oven to 350°F.
- In a bowl, mix pumpkin, eggs, almond milk, protein powder, and maple syrup until smooth.
- Stir in oats until well combined.
- Pour into a greased 8×8 baking dish.
- Bake for 30–35 minutes, until set and golden on top.
- Cool slightly, slice, and enjoy warm or cold.
