(makes 4 servings)
Meat
- 1-pound boneless, skinless chicken breast
Marinade
- 2-4 tablespoons olive oil
- 1 tablespoon lime zest
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- 1/4 teaspoon sea salt
- ¼ teaspoon pepper
- Combine all marinade ingredients in a small mixing bowl and which to combine.
- Place chicken in a large Ziploc bag and pour marinade over top. Seal the bag and remove all air. Gently shake the bag to cover the chicken.
- Allow to marinade for a minimum of 30 minutes (overnight for best flavor!) in the refrigerator.
- When ready to grill, remove the chicken from the bag and place it on a heated grill. Cook chicken on each side for about 7-8 minutes until cooked through. Enjoy!
