Sweet Potato Burger
(makes 4 servings)

1 sweet potato peeled and cubed (about 1 1/2 cups)

1/2 cup sunflower seeds

1/2 cup rolled oats

1 tablespoon fresh parsley, chopped

salt and pepper, to taste

Preheat oven to 400 degrees.

Boil sweet potato until soft. Drain excess liquid.

Add boiled sweet potato to a large bowl and mash well.

To the sweet potato, add sunflower seeds, rolled oats, parsley, salt, and pepper.

Allow the mixture to cool and form into 4 patties.

Place patties on a baking sheet lined with parchment paper (spray a bit of oil to prevent sticking) and bake for about 30-35 minutes flipping halfway through.

Top “burgers” with items such as fresh pineapple rings and arugula.
