(makes 4 servings)
- 1 pound lean ground beef
- 2 cloves garlic, minced
- 2 tablespoons coconut aminos
- 2 cups spinach, chopped
- fresh pineapple slices
- On a grill pan, grill pineapple slices 2-3 minutes per side.
- In a medium skillet, brown ground beef with garlic. Add coconut aminos and mix well to combine.
- Add spinach and mix until wilted.
- Place the beef mixture over the grilled pineapple slices.
