It’s Coach Amie back with this week’s new recipe: SWEET POTATO + BLACK BEAN CHILI
This couldn’t come at a more perfect time! We were lucky to enjoy a few random days of warmer temperatures and sunshine but we are officially in the thick of winter and this is the perfect recipe for it! If you’ve never cooked with sweet potatoes and black beans before, this is a combo I promise you will love! They make for an unexpectedly delicious combination and this is a super hearty dish- you will feel super satisfied after eating!

SWEET POTATO + BLACK BEAN CHILI
Ingredients: Here’s What You Need

2 medium sweet potatoes, diced

1 can black beans, drained

1 can petite diced tomatoes

1 small onion, diced

2 cloves garlic, minced
-
½-1 cup low-sodium vegetable stock
-
2 tablespoon chili powder
-
2 teaspoon garlic powder`

1 teaspoon salt
-
chipotle spice, to taste

1 tablespoon olive oil
Recipe: Follow These Steps

In a large pot, heat oil and add onions.

Sprinkle onions with salt and cook until soft.

Add sweet potatoes and remaining seasonings.

Cook for 3-4 minutes.

Add to the crock pot along with the vegetable broth, diced tomatoes and seasonings.

Cook on low for 4-6 hours or until potatoes are fork tender.

Add black beans and cook for an additional hour or so until beans are warmed through.

This makes a pretty thick chili. If you like, you can add more broth to desired consistency.
