Superfood Dessert
(makes 1 serving)

1 whole-grain rice cake

2 Tablespoons dark chocolate chips, melted

1 Tablespoon almond butter

1 teaspoon chia seeds

1 Tablespoon pumpkin seeds

Place chocolate chips in a small microwave-safe bowl and microwave for 30 seconds. Stir and continue to microwave in 10-second intervals until fully melted.

Evenly spread almond butter onto rice cake and pour melted chocolate over the top. Sprinkle chia seeds and pumpkin seeds over chocolate layer.

Allow cooling for a few minutes before eating. You can also place in the fridge to harden the chocolate if you prefer.
