Smoky Lime Chicken

(makes 8 servings)

  • 2 pounds boneless, skinless chicken breast
  • 3 tablespoons olive oil
  • 2 limes, juiced
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  1. Mix marinade: Whisk together olive oil, lime juice, smoked paprika,cumin, and salt.
  2. Marinate: Add chicken breast, coat fully, and refrigerate 30 minutes to overnight.
  3. Cook: Grill or pan-sear 6-7 minutes per side, or bake at 425°F for 20-22 minutes, until internal temp hits 165°F.
  4. Rest and portion: Rest 5 minutes, slice or dice, then portion for the week.
